True Ceylon cinnamon and cassia: what’s the difference?

They say that ‘variety is the spice of life’, and in Sri Lanka, aka Ceylon, that is certainly true. But we also have the spice that gives life that extra, tasty oomph!—our true cinnamon!

True? That’s because not all cinnamon is created equal. The familiar spice in your kitchen cupboard could be the true Ceylon cinnamon from Sri Lanka—or cassia cinnamon, a related but different product.

Both have their uses, but there are some important differences worth knowing.

True Ceylon cinnamon: Sri Lanka’s aromatic treasure

Known botanically as Cinnamomum verum, Ceylon cinnamon has been prized for centuries. Its delicate, papery layers form soft, light-brown quills, and its flavour is gently sweet, with subtle citrus notes.

It adds a tasty touch to tea, porridge, desserts and delicately spiced dishes without overpowering other ingredients.

Cassia: a stronger character

Cassia cinnamon comes from related species grown in countries including China, Indonesia and Vietnam. Its bark is generally thicker, harder and darker, with a bolder, more pungent flavour.

It works particularly well in robust curries, baking and spice blends where a pronounced cinnamon taste is welcome. But…

The health difference you should know about

Cassia generally contains much higher levels of coumarin, a naturally occurring compound that can damage the liver when consumed in excessive amounts over time.

Ceylon cinnamon, by contrast, contains very little coumarin, making it a sensible choice for people who use cinnamon regularly.

So, which should you choose?

For a subtle flavour and frequent everyday use, Ceylon cinnamon has clear benefits. But for a stronger, more robust taste, cassia is a good choice.

If you’re visiting Sri Lanka, why not discover our most famous spice for yourself? But look for products labelled Cinnamomum verum and buy from a trusted supplier.

After all, a little cinnamon can add a great deal of flavour. And knowing which variety you’re using makes that simple spice-of-life pleasure even tastier…
